Honeyed Hasselback Sweet Potatoes

Ingredients
2 sweet potatoes
honey for drizzling
1 Tablespoons brown sugar
1/4 green apple, peeled and chopped
1/4 teaspoon cinnamon
1 Tablespoon olive oil
1 Tablespoon butter
2 chopsticks (optional)

Method | Preheat oven to 400 degrees. Wash sweet potatoes, remove skin except for a strip on the bottom, and slice thinly being careful not to penetrate the base. Do this by either placing two skewers or chop sticks on either side of the potato as a guide, or resting the potato in a large wooden spoon. Then rub olive oil over the surface of the potatoes and place in a baking dish. Next, mix the diced apple, butter, brown sugar and a drizzle of honey together with your fingers and top the potatoes with it. Sprinkle the tops with more cinnamon, cover with foil, and bake for 40 minutes. Then remove foil and bake for 10-15 minutes more. Serve warm with another sprinkle of cinnamon and drizzle of honey, or a dab more of butter.
