2 wedges of The Laughing Cow Light Creamy Cheese (Your favorite flavor I used swiss)
About 1/3 of a large cucumber cut into small cubes
1/4 tsp garlic powder
1/4 tsp dried oregano
pinch of kosher salt and fresh ground black pepper
4 Jarred Whole Roasted Red Piquillo peppers
Dried parsley for garnish (optional)

Combine the 2 wedges of The Laughing Cow Light Creamy Swiss cheese with the cucumber cubes, garlic powder, oregano, salt and pepper. Keep stirring together until you get a nice creamy texture. It will look like this…

Carefully open a pepper and stuff in the cheese cucumber mixer. Repeat for the 3 additional peppers. Arrange on a plate and garnish with a sprinkle of parsley.
