RECIPE:
Banoffee Pie by Curtis Stone [serves 8]

CRUST
9 oz / 280 g graham crackers or Marie or digestive biscuits
1 stick / 150 g butter, melted

TOFFEE SAUCE
˝ cup (packed) dark brown sugar
1 14-oz / 395 g can sweetened condensed milk
1 stick / 125 g butter

FILLING
1 1/4 cups heavy cream
5 small ripe bananas (about 1˝ pounds / 750g total)


TO MAKE THE CRUST:
1. Line the bottom of a 9-inch / 22-23 cm springform pan with parchment paper.
2. Chop the graham crackers in a food processor until they are finely ground.
3. Pour the melted butter over the crumbs and process to blend well. The crumbs should stick together when pressed.
4. Press the crumb mixture over the bottom and 1˝ inches / 3 ˝ cm up the sides of the springform pan. Refrigerate.


TO MAKE THE TOFFEE SAUCE:
1. Combine the sugar and 3 tablespoons of water in a medium saucepan.
2. Over medium heat stir until the sugar dissolves.
3. Increase the heat and boil without stirring until the color is deep amber, occasionally swirling the pan and brushing down the sides with a pastry brush dipped into water, about 5 minutes.
4. Stir in the condensed milk and butter. Continue stirring for 5 minutes or until the sauce thickens slightly.
5. Remove the toffee sauce from the heat and spread 1 cup of the sauce over the prepared crust and refrigerate for about 1 hour or until the toffee is semi-firm.
6. Keep the remaining toffee sauce at room temperature.

TO FILL THE PIE:
1. Using an electric mixer beat the cream in a large bowl until thick and very soft billowy peaks form.
2. Very thinly slice 3 of the bananas into discs.
3. Fold the sliced bananas into the softly whipped cream and spoon into the prepared pie crust.
4. Slice the remaining bananas and arrange them decoratively over the pie.
5. Re-warm the remaining toffee sauce gently over low heat.
6. Drizzle some of the sauce decoratively over the pie. If the sauce has thickened too much to drizzle, stir a few tablespoons of milk into the sauce to create a thinner consistency.
7. Cut the pie into wedges and transfer to plates.
8. Drizzle each pie wedge with more sauce and serve.

Banoffee “Danger” Pie. That’s right, this pie has a middle name, and it is Danger.

It is British, obviously – just say the word Banoffee – it practically requires a slight British accent. This isn’t a delicate dessert. It is very sweet and very rich. And very good. It is a dessert that makes you feel like a kid.

Banoffee Pie

1 and 1/2 cups graham crackers, finely ground
5 tablespoons butter, melted
1/3 cup granulated sugar
2 cans sweetened condensed milk
1/2 teaspoon salt
3 large banana, thinly sliced
1 1/2 cups heavy cream

Place the condensed milk in a pot of water and let boil for two and half hours. Add water as needed to ensure that the cans are always covered. Let the cans cool until you can pick them up. Carefully open them and pour into a bowl. Add the salt and mix well to combine.

In a large bowl combine the graham cracker crumbs, melted butter and sugar. Mix well to combine. Press into a pie plate. And bake until slightly golden. About 10 minutes.

Remove and let cool completely.

Layer the bananas and dulce de leche in the pie shell and refrigerate at least 2 hours.

Whip the cream to soft peaks and top the pie. I left the whipped cream unsweetened – the filling is very sweet – but you can add a little sugar if you like.

Ingredients
3 bananas
1 tin of sweetened condensed milk
2 cups whipping cream
1 package of digestive biscuits or graham crackers
1 stick of butter
1 tsp vanilla
1 small bar of chocolate

Directions

Your first step can be done way ahead of time (at least hours but can be as much as months before). Remove the label on the condensed milk and submerge the unopened can in pot of water. Cover and boil for 2.5 hours. Warning: Be sure to keep the can covered by water at all times!!

After requisite time has passed, take pot off the stove and allow the can to cool. In case you’re wondering – you just made magic, er, toffee!

So you’re ready with your toffee, its time to do the rest.

To make the crust (*You can skip this step entirely by buying a ready made graham cracker crust.)
Grind up digestive cookies in food processor. Melt stick of butter in microwave and pour into crumb mixture. Blend until you have a moist sand mixture. Smooth wet crumbs into pie plate to make a crust. Bake at 350F for 10 minutes. Set aside to cool.

To make whipped cream (*You can skip this step entirely by using cool whip. )
Whip cold cream and vanilla on high until whipped Set aside

Now its time to bring it all together. Cut up bananas into slices and lay into your crust. It doesn’t matter how you arrange them really. Just go wild. (I added a bunch of chopped pecans).

Open toffee can, mix with knife until smooth, pour on bananas.

Spread whipped cream over the whole mess.

Grate chocolate on top. (I added some chopped or grated mint chocolate chips)

Put in fridge to set for at least 1 hour

So there you have it. Yum in a pan. I dare you not to love it.

- Chocolate powder – to sprinkle at the top (optional)

14 Steps For How to Make Banoffee Danger Pie
1 Grab the tin of sweetened condensed milk and remove the company’s label on it with your finger tips or knife. click to enlarge

2 Do not open it at all and place it in a pot. Pour in water until the tin is completely covered. Now, put it on the stove over medium heat. Boil it for approximately 2.5 hours. Note: Make sure to check the tin time to time in order to make sure that it is covered by boiling water all times. click to enlarge

3 In the meantime as the tin is boiling, prepare the remaining ingredients. Remove the wrapper of one package of digestive cookies and place them in a food processor. click to enlarge

4 Now, seal the processor and grind the cookies until powdered. Place the mixture into a bowl and set aside. Note: You can replace the digestive cookies with the same quantity of graham crackers. click to enlarge

5 Put one butter stick in a bowl and place it in your microwave oven. Microwave it for a few seconds until melt well. click to enlarge

6 Remove the melted butter from microwave oven and gently pour it into the bowl of grinded digestive cookies. Mix both of these ingredients with a fork or spoon until it forms a moist sand mixture. Note: You can skip this step 2, 3 and 4 completely by using a readymade graham cracker crust from your nearest market. click to enlarge

7 Pour the cookies-butter in a medium pie plate and smooth it all over the plate in order to make a crust.

8 Set your microwave oven at 350 degree foreign height (F°) and place the pie plate in it. Bake it for 8 to 10 minutes. Remove the plate from oven and set aside at room temperature of your kitchen until cooked well to handle. click to enlarge

9 When the tin is almost boiled, quickly prepare the whipped cream. Place the 2 cups of whipped cream in a medium mixing bowl and top it with 1 teaspoon of vanilla. Take a whip and mix the ingredient vigorously for a few seconds until incorporates into one another and smooth. Set the whipped cream aside for now. Note: Again, you can skip this step by using cool whip cream. click to enlarge

10 After obligatory time has passed, remove the pot of boiling water from the stove and set it aside to cool well. click to enlarge

11 Pick three fresh bananas, peel them and cut them into equal medium slices. Arrange the banana slice over the top of the cookies-butter crust. click to enlarge

12 Now, it is time to bring all the ingredients together. Open the toffee can with great care and blend it with a spoon or knife until smooth. Gently pour it on the banana slices and spread all over the crust. click to enlarge

13 Spread the whipped cream all over the ingredients in the plate until thoroughly covered. click to enlarge

14 Sprinkle some chocolate powder all over the Banoffee Danger Pie and place it in refrigerator for at least one hour before serving.

Banoffee "Danger" Pie
If you have never heard of this pie before, do not be alarmed... Just saddened that it has taken you so long to discover it.

First things first, the day before you want to make this pie, you need to make the toffee layer. It is not difficult but takes some time and a little patience.

Step 1:
Remove the label on the condensed milk and submerge the unopened can in pot of water.
Cover and boil for 2.5 hours. Remove pan from heat and let cool before removing the cans (may take up to 4 hours). This toffee sauce will now keep, unopened, as long as regular sweetened condensed milk will. I made 2 cans just incase I want some on ice cream this week Wink

Warning: Be sure to keep the can covered by water at all times!! If it is not covered by water the can may explode.

3 bananas
1 tin of sweetened condensed milk
2 cups whipping cream
1/3 cup powdered sugar
1 1/2 cups graham cracker crumbs
1 stick of butter
1 tsp vanilla
1 small bar of chocolate

Step 2:To make the crust (*You can skip this step entirely by buying a ready made graham cracker crust.)

Grind up Graham Crackers in food processor.
Melt stick of butter in microwave and pour most of it into crumb mixture (you may not need all of it and since it's easier to add than to remove, start with less).
Blend until you have a moist sand mixture.
Smooth wet crumbs into pie plate to make a crust.
Bake at 350*F for 10 minutes.
Set aside to cool.

Step 3:
To make whipped cream (*You can skip this step entirely by using cool whip. )

Whip cold cream, powdered sugar, and vanilla on high until whipped
Set aside

Step 4:
Now its time to bring it all together. Cut up bananas into slices and lay into your crust. It doesn't matter how you arrange them really. Just go wild.

Open toffee can, mix with knife until smooth, pour on bananas.

Spread whipped cream over the whole mess

Grate chocolate on top (optional)
Put in fridge to set for at least 1 hour
