IRISH POTATO SOUP

* 9 potatoes, peeled and diced
* 6 stalks of celery, sliced
* 4 large carrots, sliced
* 2 small onions, chopped
* 3 cups water
* 2 teaspoons salt
* 3 better then chicken bullion cubes (or any vegan chicken bullion brand you like), dissolved in 1/2 cup boiling water
* 6 cups unsweetened soymilk
* 1/2 cup flour
* 1 stick of vegan butter

Combine the potatoes, celery, carrots, onion, water, and seasonings in a large pan. Bring to a boil. Cover and cook until tender, about 30 minutes. Combine a small amount of milk and flour until smooth. Add this mixture and the rest of milk to the potato mixture. Stir in the butter. Cook and stir over medium heat until the soup thickens.

Irish Potato Leek Soup
Serves 6 - 8
Prep time 15 minutes
Cook time 50 minutes
Total time 1 hours, 5 minutes
Meal type Main Course, Soup
Ingredients

2 Tablespoons olive oil
3 organic leeks (white part only) (washed and sliced)
1 large yellow onion (chopped)
6 medium yukon gold or red potatoes (peeled and cut into 1-inch pieces)
6 cups organic vegetable broth
6 ounces full fat coconut milk ((1/2 cup + 2 Tablespoons))
6 ounces rice milk
sea salt & fresh ground pepper (to taste)
fresh Italian parsley (minced for garnish)

Directions
Leeks
These are leeks...
Leeks Trimmed
Trim the end of the leeks and cut where the green starts and the white ends. Slice.
Leeks Washed
Rinse leeks under warm water to remove the sand between the layers.
Medium Potatoes
I used a variety of potatoes.
Potatoes Chopped
Peel and chop the potatoes. Chop the onions.
Onions and Leeks in Pan
Heat 2 Tablespoons of oil in a large Dutch oven. Add the leeks and onions. Cover and cook for 5 - 7 minutes, stirring a few times as needed, until they are soft, but not browned.
Add Vegetable Broth
Add the potatoes and vegetable broth, cover and cook for 35 - 45 minutes, or until the potatoes are tender. Remove from heat and let cool for 10 minutes.
Puree until smooth
Use an immersion blender to puree the soup smooth. Or blend small batches in a blender.
Add coconut milk
Stir in the coconut milk.

Stir in the rice milk.
stir and season with s and p
Season with salt and pepper to taste.
Irish Potato Leek Soup
Ladle soup into bowls and sprinkle with minced parsley.
