Thai-Style Halibut with Coconut-Curry Broth

(adapted from Food Network)

serves 2

1 tbsp olive oil
1 small onion, finely chopped
1 tsp curry powder
1 cup low-sodium chicken broth
1/2 cup light coconut milk
salt & pepper
2 halibut fillets, skin removed
1/4 cup coarsely chopped fresh cilantro
2 scallions, green part only, thinly sliced
1 tbsp fresh lime juice
1 cup cooked rice or quinoa, for serving
Steamed green beans or spinach, for serving

In a large saute pan, heat the oil over medium heat. Add the onion and cook, stirring occasionally, until beginning to brown, 3 to 5 minutes. Add the curry powder and cook, stirring, until fragrant, about 30 seconds. Add the chicken broth and coconut milk, and season with salt and pepper. Simmer 5 minutes until slightly reduced.
