Caramel Apple Crisp for Two

Ingredients:

2 medium apples, peeled and sliced
2 tablespoon all-purpose flour
4 tablespoons brown sugar
2 tablespoon butter
4 tablespoons quick-cooking oats
1/4 teaspoon ground cinnamon
1 to 2 heaping tablespoons Mrs. Richardson's Butterscotch Caramel Topping
Cream or Ice Cream (optional)


Directions:

Place apple slices in two small, greased ramekins. Spoon Butterscotch Caramel topping over the apples. In a bowl, combine flour and brown sugar; cut in butter until mixture resembles coarse crumbs. Add oats and cinnamon. Sprinkle over apple slices and caramel.

Bake, uncovered, at 350° for 35-40 minutes or until tender. Serve with cream or ice cream if desired.

You'll need:

2 medium Rome apples
2 tablespoons fresh lemon juice
2 tablespoons packed dark brown sugar
1/4 cup water
1/4 cup old-fashioned rolled oats
1/8 teaspoon ground cinnamon
1/8 teaspoon salt
2 teaspoons cold unsalted butter, cut into bits

You'll need:

2 pounds ripe Bosc pears (4 pears)
2 pounds firm Macoun apples (6 apples)
1 teaspoon grated orange zest
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
FOR THE TOPPING
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup old-fashioned oatmeal
1/2 pound (2 sticks) cold unsalted butter, diced

Directions

Preheat the oven to 350 degrees F.

Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.

For the topping:

Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.

Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

Microwave Apple Crisp for One
1 apple, peeled and thinly sliced
2 TBLS brown sugar
2 TBLS quick-cooking oats
1 TBLS flour
1/8 tsp cinnamon
1 TBLS butter, melted
1 TBLS cinnamon/sugar mix (like you'd use for cinnamon toast)

Place thinly sliced apple in a 1.5 - 2 cup sized ramekin. Toss with cinnamon/sugar mix. My mix usually has a little nutmeg in it too. Combine remaining dry ingredients in a separate bowl, until well mix. Stir in melted butter and pour over spiced apples.
Cook in microwave on high 2 - 3 minutes, or until apples are tender. Let it rest for a few minutes and the topping will get crispy.

My pics have double apples, because I like a mix of apples in my baked apple desserts and I was also trying another microwave single serve apple crisp recipe at the same time. The other was a dismal failure that I won't waste your time with.

MacIntosh & JonaGold Apples
I think it's a JonaGold. I always use MacIntosh, but I always change up it's companion/s.

Peel, cut & toss with cinnamon/sugar

Mix remaining dry ingredients.

Stir melted butter into topping mix.

Pour over apples in ramekin.

Microwave on high for 2 - 3 minutes, or until apples are tender.
